Chili Meatball Subs


This is a recipe from Rachel Ray's website- it was pretty easy to make, and turned out really good! It is a little spicy, but you could tone down the spice by using a different cheese.
Chili Meatball Subs
Serves 6
Prep time 15 min
Cook Time 30 min
1 pound ground beef
1 onion (1/2 finely chopped, 1/2 thinly sliced)
1 cup corn chips crushed (I used Fritos)
1 large egg, lightly beaten
1tbsp chili powder
salt and pepper
1 tbsp extra virgin olive oil
one 28 ounce can chopped tomatoes
one 15 ounce can black beans
6 sandwich rolls, cut and toasted
2 cups shredded pepper jack cheese (about 8 ounces)
  • In a large bowl combine beef, chopped onion, 1/4 cup crushed corn chips, egg, chili powder, 3/4 tsp salt and 1/4 cup water. Shape into 1 inch balls.
  • In a large saucepan, heat olive oil over medium heat. Add sliced onion and cook until soft. Stir in the tomatoes and remaining 3/4 cup crushed corn chips. Bring to boil. Add the meatballs to the sauce, cover and simmer until the meatballs are cooked through, about 20 minutes. Stir in the beans and cook about 5 minutes.
  • Preheat broiler. Spoon meatballs and sauce onto the toasted rolls. Top with cheese. Broil until the cheese is melted.
